Friday’s Scoop 12/7/12

Well that was fast, it feels like I just sat down to write the first ever Friday’s Scoop, but here I am scrambling to think of things to write about this time around! First, we can start off with how this week flew by! Did it for anyone else? It went by way too fast because I was barely able to bake anything! Even though I did little baking, I did make some of the most wonderful, delicious, scrumptious, sort of gluten free, sort of vegan cookies! I decided to break out my Babycakes Covers the Classics Cookbook because I have been having some GI issues, so I began to think about what could be aggravating my gut? My mind goes maybe gluten? maybe dairy?
As of now I still do not know what the issues are, but hopefully they will be resolved soon! As I flipped through the pages of Babycakes I had a tough time deciding which recipe to try, should I try the nilla wafers, or the chocolate chip cookies? or maybe the Thin Mints?
I decided on the Thin Mints. I altered the recipe the slightest bit and they were AH-MAZING! They taste like your lithe next-door neighbor delivered them with her wagon in tow and with her green vest on! Mind you they may not look all pretty and uniform, but they sure satisfy your longing for a thin mint! Here’s a picture preview!

 Soon I will be sharing this recipe! I have not been able to take pictures because it has been getting dark so early! It is only five o’clock as I write this and it is pitch black outside! I don’t like this, can’t wait for the days to start getting longer! As I sit eclipsed by darkness (so poetic of me, not) I pin a ton, way more than I should on Pinterest! Just like last week here are some of my favorite pins from the week!

Whole Wheat Coffee Cake Muffins from How Sweet Eats Kind of healthy and looking mighty delicious, count me in!

Brown Sugared Carrots from Cooking Channel Cooked carrots can be a great addition to a holiday meal, but beware not to overcook! No one wants mushy carrots! I can’t wait to taste this inventive combination of brown sugar and carrots!

Chocolate Chip Cookie Dough Truffles from Bakerella I am not much of a truffles person, but this picture just looks so enticing! Maybe these will be the truffles that convert me!

My new boots arrived! Do you like? So far I am really liking them, did not need to break them in!
Here’s like 1/16 of my nail polish collection, to me nail polish is kind of a big deal. Okay maybe a HUGE deal, seriously sometimes I change it the next day, or even just two days later! Do you like nail polish as much as I do?

Friday’s Scoop

So, I have had in mind for a while to start a regular Friday posting that sums up my past week. Now I have finally taken the initiative and here I am with the Inaugural Friday’s Scoop! I guess I will blabber even more than I already do! Maybe share some pins? perhaps some of my Instagram pictures from the week? I will begin by sharing some of my favorite pins from recently!!

  1. Old Fashioned Crumb Cake via My Life as a Mrs.  This crumb cake couldn’t appear to be easier! It uses yellow cake mix and a sinful crumb mixture, convenience and delicious! Can’t wait to try it soon! Maybe for Christmas morning? 
  2. Lemon curd via King Arthur Flour Now I have made lemon curd the tedious way, sweating over the stove and trying to not over cook the eggs. It wasn’t SO bad, but it was not the easiest process. Well, I can’t wait to try this recipe from KAF because it’s made in the microwave! 
  3. Salted Caramel Shortbread via How Does She? I tried making these over Thanksgiving, but my candy thermometer failed me and decided that it would go up very very slowly so instead of soft ball stage, it ended up at the hard-crack stage. Despite this failure, I do plan on getting a better candy thermometer and retrying the recipe again! (Any recommendations for a candy thermometer? I was thoroughly disappointed by my previous one.)

TGIF and Pins

Hello! Thank God it’s Friday! While the weather has been beautiful, I am exhausted and need my beauty sleep! Haha! Well today I wanted to say hello and share some delicious looking pins I have come across!

Blueberry Pancake Cupcakes these look like so much fun! They have a maple buttercream frosting! A new spin on breakfast that allows me to have cupcakes at all times of the day! Cannot wait to whip these up!

Chocolate Muffins made with Chobani I have some plain Chobani sitting in my fridge that needs to be used up soon, and this sounds like the perfectly chocolaty way to use it up!

Apple Pie Cookies I just bought a “peck” of apples to make these! These are too cute, they look like mini apple pies, but they are cookies!

Coconut Quick Bread I may or may not have a ridiculous obsession with coconut! I love its fresh, tropical flavor and I love quick breads! This would make the perfect addition to breakfast or a yummy mid-morning snack! I must try this soon!

Homemade Oreos Who doesn’t love oreos? I find oreos so hard to resist because of their crispy chocolate cookie layers that sandwich a creamy layer of sugary filling! Real oreos are full of processed junk and fat, but with these you know what is going into them, which makes them much more enjoyable!
